Immer weniger junge Menschen wollen Bäcker werden, zudem steigt in der Produktion durch höhere Produktionsmengen die Arbeitsbelastung für die Angestellten. Die Bäckerei Harms beschäftigt sich daher mit der das gesamte Bäckerhandwerk beschäftigenden Frage: Wie lässt sich die Arbeit erleichtern und das Arbeitsumfeld verbessern, um die Fluktuation von Angestellten zu reduzieren?

Ziel der College-Studie wird es sein, Maßnahmen zur Eindämmung der Fluktuation der Beschäftigten zu entwickeln. Die Maßnahmen sollen mittel- und langfristig dazu beizutragen, das Image des Unternehmens sowie des gesamten Berufsstandes zu verbessern. Dies soll im gleichen Zuge Anreize für potentielle, neue gut qualifizierte Angestellte und vor allem Auszubildende schaffen.
